Getting the Most from Your Fall Farmers Market Harvest
While the summer growing season in Colorado is coming to an end, there’s still a delightful bounty to be had at the local farmers market. And, you can prepare fruits and veggies in a way your kiddos will love…we promise!
One of our favorite Fall finds at the market is Colorado-grown corn, as it’s versatile and fun to eat. However, many recipes recommend you load up on butter to make corn delightful to your kiddos. We received the following recipe from an inspiring local mom, Alli Howe of Don’t Panic Mom, who found another way to make corn delicious and nutritious (there’s added protein and fiber in there!). These grilled corn on the cob ears are sure to delight the whole family – yummy!
Grilled Basil Corn

Servings: 4
Total Time: 15 minutes
Ingredients:
- 4 Cobs of fresh corn
- 3 Tablespoons Extra Virgin Olive Oil
- 1 Teaspoon Sea Salt
- 2 Tablespoons Mini Basil Leaves
- 1 1.2 ounce Package Tomato Basil Crunchy Bean Snacks
Instructions:
Place fresh corn with the husk still intact on a grill set to a medium-high heat. Grill for 10 – 12 minutes rotating once or twice. The husks stand up well to the heat – so don’t worry about exact timing on rotating the corn.
While the corn is cooking, prep your toppings. Smash your Tomato Basil Crunchy Bean Snacks right in their package. You want to smash it enough so that the pieces will evenly stick to the olive oil. Pour the Crunchy Bean Snacks onto a large plate. Separately, combine the sea salt and olive oil in a small bowl and stir a few times.
Remove your corn from the grill. Once it’s cool enough to handle, brush your corn with the olive oil and sea salt mixture. Next, roll your oiled corn in the Tomato Basil Crunchy Bean Snacks and garnish with mini basil leaves.
