Are you looking for a refreshing and not-so-muffin-top-forming dessert?! I AM!
Anyway I can get my husband to eat fruit, I will… even if I have to disguise it in dessert form.
Here’s your easy recipe:
INGREDIENTS:
-2 small packages of vanilla, white chocolate, or cheesecake pudding mix
-a large tub of any berry-flavored yogurt (I used half regular and half Greek, which made it pretty thick and creamy)
-1 large container of frozen whipped topping (thawed)
-a 16oz package of frozen berries of your choice (strawberries, mixed berries, etc.), slightly thawed
-1lb of any fresh berries (I used all strawberries)
-any other fruit you desire (mandarin oranges, bananas, kiwi, etc — I would stay away from melons, as they are more watery)
-Nilla Wafers or graham crackers
DIRECTIONS:
1) Cover the bottom of your dish, bowl, individual bowls, or whatever you are using to hold the dessert with a single layer of Nilla wafers or graham crackers.
2) In a separate large bowl, combine the yogurt and the dry pudding mixes until all the powder disappears (will be slightly lumpy).
3) Add the whipped topping and stir well.
4) Stir in the package of frozen berries, as well as the fresh fruit. If you are using bananas or apples, cut them right before serving as to avoid browning.)
5) Fill the dish/es with your “Berries ‘n’ Cream” filling
6) Top with Nilla wafer or graham cracker crumbles. These can be created by putting approximately 5 wafers or 2 graham crackers in a Ziplock bag and crushing them with a mallet, a constantly-crashing computer, or a hard-headed person (note: the person must genuinely be hard-headed).
7) Serve immediately, or if you want soft Nilla wafers on the bottom, refrigerate overnight.
Voila!
